Well just finished brewing Krampusnacht 2015 on Sunday (12/7/2014). It is a complex brew for the holidays, with a large grain bill; 25 lbs for a 5 gallon batch. I added Juniper berries to it this year and upped the quantity of Spruce and Douglas Fir compared to last year. To give it a little fruitiness I add Lingonberries as well. The biggest change this year I went all grain compared to last years batch which was a partial mash.

Krampusnacht 2015 just moved from primary to secondary on 1/4/2015. It deffenatly smells good, I will let it set in secondary until around March or April before bottling it. This time I’m going to add some additional yeast in around bottling to make sure it carbonates.
