Wild Ale

Well experimenting with wild yeast that I captured from the environment, this process started back in November (2014) when I brewed a starter beer that I added some Bradford pears from outside and left open to the environment in an enclosed area in my home. After a week I good clean fermentation started and a small yeast bead had formed. Over several weeks I washed and transferred the yest to new starters to have a good culture.

I chose to use the recipe I had for a White Merlot and Lavender Saison and apply this yeast to it. After a few weeks of good fermentation I was left with a lovely farmhouse stile brew. Characteristics of some spice but clean, might try it with Wit recipe next time.
